This high-efficiency machine divides dough into equal portions at regular intervals and automatically transfers them to the intermediate proofer. It features a dough hopper with a capacity of (80–180) liters, made of stainless steel to prevent the formation of air pockets inside. The hopper is equipped with internal blades to facilitate smooth dough flow. The divider nozzle is made of European aluminum to ensure smooth and uniform dough pieces. The screw is also made of European aluminum, with a hardened chrome shaft to prevent wear. The machine includes three polyamide molds and is equipped with a mechanism to sprinkle flour on the dough balls. Dough piece weight can be adjusted within the range of (35–160) grams, ensuring flour efficiency and minimizing waste or spillage. It also features a mechanism for controlling the amount of flour applied to the surface of each dough piece. The weight of the dough pieces is controlled individually for each opening via a sensor, allowing greater accuracy and adjustability. The machine is designed for ease of assembly, disassembly, maintenance, and cleaning. It includes an electronic control system for the flour sprinklers and a digital counter for tracking the number of dough pieces.
The intermediate proofer operates with a conveyor belt system made of felt material. The side doors are designed with transparent plastic centers to facilitate product visibility, framed with stainless steel, and equipped with a sliding open-and-close mechanism. It is fully sealed from the sides, top, and bottom to retain moisture effectively. The machine is equipped with internal lighting and stainless steel trays for collecting excess flour. It features a multi-speed motor, controlled by an inverter, to precisely regulate the required proofing time. Additionally, it is equipped with a belt guide (brim) to ensure smooth conveyor operation. For enhanced hygiene and safety, the proofer is encased in a stainless steel cover that maintains food-grade cleanliness and prevents worker contact with moving and hazardous parts.
The dough sheeter features an efficient flattening system that receives dough from the intermediate proofer and delivers it to the final proofer automatically using an air system. Dough transfer is facilitated by pneumatic jacks (pistons), capacitive sensors, and pushers made of food-grade stainless steel. It is equipped with a conveyor belt for excess flour removal and stainless-steel trays. The blade holders of the sheeter are made of thick hardened chrome to prevent any bending, ensuring full contact between the blade and the entire surface of the rollers. The machine includes a flour dusting mechanism for dough balls, ensuring flour efficiency by minimizing waste and preventing spillage outside the sheeter. The system allows precise control of the amount of flour spread on the dough surface and the conveyor, preventing excess accumulation on the dough sheet. The flour dusting system is equipped with barriers to prevent flour leakage outside the flour container. The sheeting rollers are made of hardened food-grade chrome (Hard Chrome) for durability and superior performance.
An advanced machine operating on gas, equipped with specially designed burners to ensure optimal heat distribution for producing high-quality Chapati and Lavash bread. The baking chamber is fully insulated to ensure high thermal uniformity, excellent heat retention, and prevention of heat leakage, which enhances fuel efficiency. It is entirely clad in stainless steel, while the internal structure is constructed from specialized metal supports and heat-resistant sheets. The oven comprises three main layers, all made from heat-specialized metals. It is equipped with comprehensive safety and protection systems for gas, electrical circuits, and mechanical safety. The design minimizes noise and friction. The speed of the three layers and all other components of the oven is controlled via a control panel, which also allows for temperature adjustments as required. This conveyor system is the ideal solution for bringing bread to the appropriate temperature before the packaging stage. It is equipped with two sets of fans for effective cooling. Due to its multi-tier design, the system requires minimal space. It is specifically designed for cooling flatbread and features a control panel for setting the desired speeds. The conveyor's length ensures a complete cooling process for the bread. A special stainless-steel system is used in the bread transitions between layers, preventing any folding or deformation of the products. The conveyors are made from food-grade materials that are resistant to stretching, shrinking, and abrasion, and can withstand the bread's heat. The system is powered by two motors.
Flatbread stacking machines ensure an optimal stacking mechanism for bread, tailored to stack any number of loaves per package based on the bread's diameter. The bread size ranges between 18–30 cm, with flexible handling enabled by an adjustable controller. Stacking is performed consistently and neatly, adhering to safety standards. The machine's exterior casing is made of stainless steel, while all parts in contact with the bread are manufactured from food-grade materials. It offers stacking capacities ranging from (5 to 20) loaves per package. The input assembly belt is made of silicone, ensuring smooth product entry into slots without slipping.
